Beta/Alpha
In these times, mounts were more or less as they were in Vanilla (see below), there's just one small remark to make: Tauren had Plainsrunning, which let them run as fast as a mount without actually using one; the "lore" reason for this was that no animal was mighty enough to bear the Tauren into battle, although when the game released, they got Kodos. Very strangely, I was not able to find a single screenshot of a Kodo, although other mounts, like Trolls, Tigers, and Horses, were definitely in the game. The theory that they weren't gonna be added seems far fetched, since they
existed in WC3
.

Patch 1.1
The release of the game. Mounts had a 3 second cast time. I think it's easier to summarize the state of mounts at that time with a few tables:

This training was discounted by being Honored with the relevant race, which you would have by level 40 if you were buying your own mounts (assuming you were questing in the right zones), and would have if you were buying another race's, since you had to be Exalted before another race would even consider selling you mounts.
Alliance also has a bonus mount that requires Horse Riding, but isn't found at the normal horse vendor: instead, it is sold by a random NPC in the Wetlands. This mount isn't really better or anything like that, although it's White, not Blue. It's a 60% one, and costs the same price as the other ones do; the
Black Stallion Bridle
(the tooltip is that of Retail WoW, before you rage at me in the comments). They also have another bonus mount, the
Winterspring Frostsaber
, which requires Tiger Riding and exalted with
Wintersaber Trainers
(so a double rep grind if you're not a Night Elf), which in turn requires days upon days of dailies. The Horde has no such quest mounts (admittedly, a version of the Frostsaber was later added for Hordies to enjoy, but that was in WotLK). Paladins and Warlocks also had quest chains for their own mounts, which I'll just let you read about elsewhere if you're interested:

. The 100% ones were technically unobtainable until Patch 1.3, so I'll also mention them there.
There was even one mount that dropped off a dungeon boss: the
Rivendare's Deathcharger
, a mount with a 0.4% drop chance (buffed to 1% since then, and still very sought-after). This didn't require any training, so if you got this, congrats to you! You just saved yourself 1000, so roughly 500k in modern WoW (inflation adjusted). There were rumors that
Warchief Rend Blackhand
dropped his mount
Gyth
, but he didn't (or it just never dropped for anyone and they removed it a few patches into Vanilla, but this seems far-fetched :). Blizzard themselves made a references to this themselves in Cataclysm, with another super-rare mount from
Ultraxion

All of these mounts dismounted you if you were attacked, or touched water.
There were already a ton of mounted speed increases, so I'll just let you watch
this
. Keep in mind that the enchant was added in Patch 1.8.
Patch 1.2
You can now learn other races' mounts, assuming you have Exalted with them. This is usually done by
turning in
insane amounts of
Runecloth
(an endgame cloth). Assuming you brought it all of the Auction House, you could end up adding 1000to your price. Obviously, this could be farmed by anyone (not just Tailors or something like that), so you weren't profession restricted in getting it. Worth noting here is that you know how I said you had to buy individual speed training above? Well, that training is mount-specific: meaning, if you're a gnome who gets his Mechanostrider Training but then wants to get a Horse mount, you'll have to buy the training again. Admittedly, if you knew beforehand you wanted a 100% speed mount that didn't belong to your race, you could plan your leveling path starting around level 40 to level via grinding and farming cloths at the same time, but this isn't efficient since in that bracket, Questing is more efficient, and you won't be able to get reliable drops until the 50s.
Obviously, you couldn't purchase the enemy factions' mounts.
Patch 1.3
Blizzard felt the need to also make the enemy factions' mounts unlearnable. I'm not sure what provoked this severe nerf, considering they'd already made it impossible to purchase enemy mounts.
Also this is when Warlocks and Paladins got their epic mounts, which also cost a horrendous amount of gold/farming time, and invovled a minor rep grind with the
Argent Dawn
. (Important note: Warlocks could cheese this if they knew a Warlock who already had the mats).
Patch 1.4
Another important patch. Previously, Epic mounts were just recolors of the 60% Speed ones, but in this patch, the modern armored ones were added, and go the prefix "Swift". The ones previously in place were made unobtainable, and you were given the choice to turn in your armor-less mounts for armored ones. The game was like 5 months old back then, and mounts had no collection aspect to them, so most people just went for the coolest-looking ones - and not everyone had even purchased one back then. In modern WoW, these mounts are some of the rarest mounts in the game - in fact, probably
the
rarest.
In other news, PvP became a thing in this patch - not BGs though, just Honor Points. This means two things:
If you got to Rank 3 (which was hard at the time because, you know, only World PvP was a thing, but immediately became super easy once BGs were released), gave you a 10% discount on goods from your capital city - meaning it was easier to afford your mount.
Also, getting to Rank 11 (this remained a pretty insane task throughout Vanilla WoW) rewarded a 100% speed mount. This wasn't technically free, but only cost 100 and differed based on your race, meaning you should already have the training.

Patch 1.5
The new "Swift" mounts now have glowing eyes and their looks have generally been improved.
Also, it was in this patch that the first 2 BGs were added: Warsong Gulch and Alterac Valley (Arathi Basin was added later). All of them have factions associated with them, but only one rewarded a mount: the
Stormpike Guard
/
Frostwolf Clan
. These didn't require training and cost 800, so quite a discount.
Patch 1.7
The Zul'Gurub raid has been added, and with it came 2 new mounts, none of which required training: the
Swift Razzashi Raptor
and the
Swift Zulian Tiger
. Both mounts were removed in Patch 4.1.
Patch 1.9
The Gates of Ahn'Qiraj World Event happened in this time period. The community on your server had been gathering random mats for a few months, and the most elite of neckbeards had completed the Scepter of the Shifting Sands questline. If you finished this within 10 hours of the first person to do so, you would get the
Black Qiraji Battle Tank
. Obviously, this mount is insanely rare, and if you see someone with it today, know they are a true Champion. The questline to get this is absolutely insane, and involved clearing Blackwing Lair, killing hundreds of elites around the world, clearing the Sunken Temple dungeon, doing a Garrison Invasion-esque 40-man outdoor event, killing trash in Molten Core, obtaining reagents, sneaking in into enemy capital cities, killing 20-man outdoor raid bosses, and killing Onyxia.
Also, since AQ is a big place, Blizzard kindly gave us 4 mounts to use inside the instance. They're all recolors of the MVP that is described just above. The Yellow, Blue, and Green drop like candy from trash in the raid, but the Red one is a lot rarer, and even has an achievement tied to it in Retail. These mounts can only be used inside AQ, so for years you didn't really see people riding Qiraji, but in Cataclysm, Blizzard let us get the Blue one as a super rare Archaeology discovery. This is still pretty hard to get though, so the spirit of these mounts being rare is still there :)
Patch 1.12
The items that summon the mounts are now different colors depending on the speed they grant. Blue is for 60% speed mounts, and Purple for 100% speed.
Patch 1.12.1
There are no longer such concepts as "Mechanostrider Training". Instead, each race has access to their own version of "Riding", a hidden profession. Basically, this meant that you couldn't ride the enemy faction's mounts because you could only skill up in your own race's mounts. I'm also gonna leave the BC flying speeds here, since they released soon after.

Patch 2.0.1
The Rank 11 mounts from Patch 1.4 are no longer limited to people at Rank 11. They also no longer cost gold, meaning new players starting with the launch of BC could choose to pursue this route, which is now a lot more viable: you just had to win between 10-30 games in each BG introduced at that point (except for Eye of the Storm) to farm out a special currency.
Patch 2.0.3
It's flying mount time! Only in Outland for now though. Training to use these flying, 60% speed mounts cost 900, and the mounts themselves cost 100 to buy, and was available at level 70. Did you notice how slow they were? Well, they
are
really slow. Everyone still realized that flying was still a lot more efficient that walking, since nothing could really dismount you, and you weren't vulnerable to World PvP, despite them technically being 40% slower. Did you also notice how I said
Outlands
? Even other areas added in Burning Crusade (such as the Isle of Quel'danas, Eversong Woods, and Azuremyst Isle) still didn't have flying in them, and they still don't today. This is part of the reason why no one goes to Silvermoon City or the Exodar.
If you wanted Epic flying mounts, so 280% speed, you would have to pay 5000 to get your training, and 200 to buy your basic Epic Flying mount. This means you would have to save up for months on end to be able to afford this, but it was totally worth it. Remember, back then, each mount only had one speed to it, so your 60% flying mount could never fly at 280%, even if you had the training. Like I've said above, if you were absolutely awesome at PvP and got
Gladiator
, you would get an exclusive mount and free training. This was great motivation to get into PvP, which has been a bit of a problem in the game until BFA. This is because in WoD, Blizzard removed any difference between PvP and PvE gear, meaning you could never be your best at PvP without also doing PvE. This remained a problem all through the expansion, and, despite Blizzard's feeble attempts to give us reasons to PvP (achievements such as

Fighting With Style: War-torn
gave cosmetic rewards in Legion), but those didn't raise Arena participation. Fortunately, in BFA there are now essences that require participation in PvP, such as Conflict and Strife and Blood of the Enemy, but most people still just AFK run into a tree for most of the Battleground.
This patch also added another movement speed increase item: the
Riding Crop
. It's made by Leatherworkers and the pattern can be purchased from a man called
Thomas Yance
inside the
dungeon
of Escape from Durnholde Keep for , as well as
Ashes of Al'ar
, one of the prettiest and most famous mounts in the game. I'm not going to mention every single drop mount they add, but here I wanted to mark that Blizzard was beginning to add mounts that didn't really have any pre-established lore behind them.
Also this is just fluff, but there was now a /dismount command you could macro in to something. This was very useful since (I
know
this was the case in Vanilla, please correct me if it was different by BC) you couldn't turn in quests while mounted or in
Travel Form
.
Patch 2.1
You are now dismounted if you try to cast something while on a mount. There is now also a Lua condition called , which determines whether you can fly in the zone you are currently in or not.
More importantly though, we are introduced to a faction called the
Netherwing
, which at Exalted will allow you to gain the trust of one of 6 different-colored Netherwing Drakes, and then purchase the others for 200 each. You couldn't really pull off some insane cheese by just only buying these mounts, since the quest chain does require the highest level of flying to complete. This was sort of controversial among the lore nerds, since Dragons are sentient and we are now effectively enslaving one. In this case, we are told we have done enough dailies to gain their trust, which is how we obtain one,
as the quest text to get your Drake says
. When Wrath of the Lich King gave us like 20 new dragon mounts, it's implied this is how they're obtained, but, ummm... no one technically says that, so keep that in mind next time you're riding a dragon.
Also we now have a new mounted speed increase item, the
Skybreaker Whip
, which you can get from a quest available at Honored.
Patch 2.3
The first 2 profession mounts! Both were made by Engineers, and there was one for each skill level: the
Flying Machine
and the
Turbo-Charged Flying Machine
. Many people immediately switched to this profession, even though it wasn't really that great at that time - you really can't underestimate how much people loved mounts.
Patch 2.4.3
You can now get 60% speed at level 30, and mount costs had been reduced down to 35. The Epic ground mounts now only costed 600, down from 900.

310% Flying Mounts
I thought this merits it's own section. WotLK added mounts this fast, but there is no training for them - instead you get it for free assuming you've done the fairly challenging content getting one requires, summarized in the below table. All of these required either insanely long grinds or quite challenging PvE content to obtain. Here is a table of all of them:

All of these became quite lucrative to get with the announcement of trainable 310% flying in Cataclysm: getting one before it launched would save you 5000.

Patch 3.0.2
Lots of changes here, so I'll probably end up missing some.
Flying in Northrend didn't require you to learn another tier of flying like you did at the beginning of BC, but you
did
have to pay a bit to be able to fly there. 1000, to be precise. On the bright side, you only had to pay once for this, since you could buy an Heirloom called
Tome of Cold Weather Flying
and mail it to all of your alts. You could learn this at level 77, because the last two zones you were meant to quest in - Icecrown and Storm Peaks - were designed with flying in mind.
You can now have as many mounts and non-combat pets as you want without losing bag space! This marked the beginning of mount/pet collecting. This library wasn't account-wide yet though, so if you got a Rivendare's Deathcharger on your alt or something, it was stuck on that toon forever :(
Death Knights were added, and with them came the first mount obtained from a (non-repeatable) quest.
The Sons of Hodir
went live in this patch, and with them came the first
multi-seat mounts
, and the first
mounts with vendors
, showing just how much Blizzard could do with their mounts.
There were also more zones you couldn't fly in: Dalaran and Wintergrasp.
Patch 3.0.8
This patch lifted the racial restrictions on mounts introduced in Patch 1.12.1. This lead to some appearances like Night Elves on Mechanostriders that must have looked pretty crazy at the time.
Patch 3.1
Ground mounts will no longer dismount you when you hit water. Flying mounts, however, still do that.
Patch 3.2
This patch changed
a lot
of how mounts worked. It cut the cast time in half (3 secs. -> 1.5 secs.) and changed the level, cost, and discounts to your basic mounts. Looks like its time for another table! (Note that mount costs don't change unless specified).

Patch 3.3.2
Remember the old Rank 11 PvP mounts? The currency you were meant to farm out from BGs has been removed. I'm not really familiar with the history of PvP currencies (wink wink), but you could theoretically queue for any BGs now, although I would say it's still beneficial to queue for the 3 OGs, since they had factions tied to them. You didn't technically have to though, so you could optimize queue times.
In even more important news, this Patch added the first Pet/Mount to the in-game store. You might think this isn't really a big deal, but back then, it was, since it scaled with
all
of the training speeds, and was account-wide. This was super revolutionary at the time, and everyone who was new to the game at the time immediately purchased one. 50% of everyone doing low-level Twink BGs, was riding one.
Just some random fluff here: I wasn't 100% sure of all the reasons it was so OP before writing the above so I went looking for 10 year old WoWHead comments, and it was sort of funny to see how people hypothesized it might drop from
Algalon the Observer
in
Vault of Achavon
... Algalon is a boss in
Ulduar
who is only available after competing the instance's
Challenge Modes
(so basically attunement), and only dropped gear for those skilled enough to go through the trouble of getting attuned to him.
Cataclysm
All of the changes made in this expansion happened during the prepatch - 4.0.1, so I'll just summarize them down below.
With the addition of
Flight Master's License
, flying mounts became usable everywhere - not just Outland or Northrend. This was trainable at level 60 for 250. Note: Burning Crusade zones in the Old World still had no flying tied to them, and still don't.
Almost all mounts (not the class, Arena, and some of the profession ones) are now account-bound.
310% Flying Speed training is now a thing.
Cold Weather Flying is now learned at a trainer at level 68, and it now costs 50% less.
Also, the first two-seater mount was added to the game: the
Sandstone Drake
. Before, you could only get something like that via the Recruit-a-Friend system, but that required money (unless you actually had friends). It was still pretty darn expensive though, because some of the mats for it were only sold by vendors and cost thousands of gold - even if you farmed every single reagent you could, you would still have to pay at least 24,000 gold for those mats - no reputation discounts.
Mists of Pandaria
Mists began the trend that continues to this day of only being able to unlock Flying in the endgame (we don't know how Shadowlands will treat this, but there's no reason they'll be deviating from their usual strategy of locking it behind endgame content). At least in this expansion, you could just buy it at level 90...
Patch 5.2
There are now quests that send you to go and learn the appropriate riding skills at level 20 and 60.
Warlords of Draenor
In Warlords of Draenor, Blizzard seriously considered not giving us any flying at all. People were really unhappy with this though, so Blizzard came up with a compromise - we would have to complete an achievement that proved we had done everything we could in Draenor:
